The efficient built-in smoke generator will make either hot or cold smoke for up to eight hours at a time; you’ll want to keep an eye on your foods, of course, but active oversite can be as minimal as you feel comfortable with. The smoke generator burns puck-shaped Bradley smoke briquettes that you load into the burner feeder; each of the briquettes burns for about 20 minutes. There’s a separate generator for heat so the stainless-steel insulated cabinet can be used either as a smokehouse or as a slow-roasting oven. The four interior wire smoking racks are removeable, with end stops to prevent tipping and spillage, and the entire unit sits on sturdy, broad-based feet. The side-mounted generator unit has a removeable panel for easy inspection and maintenance. Simple to use and maintain, this superbly designed home smokebox is C.E.- and E.T.L.-approved.
